Foil packet meals = cooking at its simple best

I couldn't agree more with the above statement. As you guys know I am a fitness competitor and prepping meals is a huge part of my nutrition when I am on prep. It can be very time consuming. That means I am always looking for quick and simple recipes to get my food ready so I have more time for training. I also want them to taste good. I don't limit my sodium on prep so I flavour everything! And foil packets are so much fun, easy, and help create amazing flavours with your ingredients. They can also be prepared for oven, bbq or even camping!

This book: 150 Best Recipes For Cooking In Foil by Marilyn Haugen has quickly become one of my favourites for preparing meals! The delicious grilling and one recipes offer convenience with minimal cleanup. I hate cleaning so this is tremendously helpful for me. Its also great for the busy person who doesn't have a lot of time. Many of the dishes I ate ahead of time and refrigerate or freeze for reheat later.

I also like that the ingredients that she uses for her recipes are easy to find every day ingredients. You just chop, mix and you are ready to go. I make mine in the oven but you aren't just limited to the oven with these recipes which is particularly useful no matter what your cooking situation is.

I give this book an 8/10 simply because it is in black and white and not every recipe has a photo. However every recipe that I have tried has been amazing! So grateful to have been sent this book!

150 Best Meals In A Jar - Tanya Linton - Book Review

I love mason jars! I have always said that "everything tastes better in a mason jar." And it does! Thats why I was excited to receive this book 150 Best Meals In A Jar. Once you start using mason jars you will see just how easy it is to do meal prep, eat on the go. You can even be as innovative as you want with the recipes. There really are no limits.

The book has a wide variety of delicious meals for breakfast, lunch and dinner. It includes soups, snacks, fruit and vegetable salads, grain and legume salads, pastas, rice bowls, over night oats and even desserts.

My favourites are the over night oats. I always love including that into my own plans as well as my clients. One of my top fav recipes is the chocolate protein smoothie that is on pg 19.

The recipes are easy to follow, have great ingredients that are easily available and most often times you already have in your panty. Tanya Linton also provides great variations of the recipes so you aren't limited to exactly what she has in the originally recipe.

Overall I give this book an 8/10. There arent pictures of each recipe but there are just so many amazing options and variations its a go to book for meal prep. If you are into health and fitness and want amazing healthy recipes this is a go to!

Let Them Eat Wheat! Using Ancient Wisdom/Modern Science to Overcome Food Intolerances - Book Review

I was recently sent a book by Dr. Jon dullard to review. The title of the book was Eat Wheat - A scientific AND Clinically-Proven approach TO Safely Bringing Wheat AND Dairy Back INTO your diet.

What I loved about the book: Its based on scientific facts that he has used with thousands of patients to help them cure their food intolerances. This book is a real eye opener and a must read for fitness and health enthusiasts or anyone that has dietary issues/intolerances. Its great also because it is evidence based.

I also enjoyed that he discussed the underlying cause of the gluten-free explosion.  And that he goes on to discuss that when you eliminate wheat and dairy fro your diet it may illuminate your symptoms but it may also be a temporary solution.

This book is also a great read because it helps you learn how to navigate around food toxins in modern what and dairy and reveal the hidden science on the benefits of wheat and dairy. Through this he helps you see that you can retrain your body to digest wheat and dairy again. These things are very applicable for health but for bodybuilding and aesthetics it does not 100% apply in my opinion.

Has gluten been found guilty without a fair trial? It wouldn't be the first time an innocent food was given a life sentence. For example, after almost 60 years of so-called "hard science" condemning cholesterol, we now find out that the science was flawed and high cholesterol saturated fats, such as butter, have been officially taken off the FDA's nutrient concern list. New Study Confirms That
Mercury Is Linked to Autism
Researchers found strong relationship between mercury toxicity levels and autism severity.

Two new studies by international teams, including Egyptian scientists, have validated the link between autism and mercury.

In an article published in the journal Metabolic Brain Disease, a team of nine scientists from leading Egyptian universities and medical schools confirmed the causal role of mercury in the onset of autism.

The scientists determined the extent of mercury poisoning in children by measuring urinary excretion of organic compounds called porphyrins, which act as biomarkers for mercury toxicity. The researchers also measured blood levels of mercury and lead. The researchers found a strong relationship between mercury toxicity and the presence of autism and a direct correlation between levels of mercury toxicity and the severity of autism symptoms.

The scientists studied 100 children; 40 with autism spectrum disorder (ASD), 40 healthy individuals and 20 healthy siblings of ASD children. The results showed that the children with ASD had significantly higher mercury levels than healthy children and healthy siblings. Children with the highest mercury levels had the most severe autism symptoms.

At least six American studies have linked autism presence or severity to mercury exposure as determined by measuring urinary porphyrins. The first study, completed by Heyer et al. in 2012 (Autism Res 5:84) showed a correlation between the presence of autism and specific urinary porphyrins associated with mercury toxicity. This affirmed an earlier study by Kern et al. (2011, Pediatr Int 53:147) where specific porphyrins associated with mercury toxicity were significantly higher in ASD children as compared to non-autistic controls. Woods et al. (2010, Environ Health Perspect 118:1450) also saw disordered porphyrin metabolism in autistic kids which was not observed in non-autistic control children. This again suggested increased mercury toxicity associated with autism and autism spectrum disorder.

Autism severity has also been correlated to levels of specific porphyrins associated with mercury toxicity. Kern et al. in 2010 (Biometals 23:1043) showed a strong relationship between the level of autism severity as measured by the Autism Treatment Evaluation Checklist (ATEC) instrument and the amount of urinary porphyrins observed in ASD children. Geier et al. (2009, J Toxicol Environ Health A 72:1585) also correlated urinary porphyrins to autism severity in a blind study using the childhood autism rating scale (CARS). This study was further elucidated by Geier et al. (2009, J Neurol Sci 15:280) where children with severe autism showed significantly higher urinary porphyrins associated with mercury toxicity as compared to those children with mild autism and non-autistic controls. Other biomarkers measured in this study correlating mercury toxicity with autism severity include the presence of glutathione, cysteine and sulfate metabolites in plasma.

In a second study, by Mostafa et al., published in Metabolic Brain Disease in June 2016, an international team of Egyptian, Norwegian, Saudi Arabian and Chilean physicians and scientists used a different set of measurement protocols to find a direct correlation between mercury levels and autism diagnosis. The reasearchers measured levels of neurokinin A and B - pro-inflammatory neuro peptides that indicate the presence of mercury in the blood – in 84 children with ASD and 84 controls. The results showed a positive linear relationship between mercury levels and the severity of autism symptoms.

Many of the mothers of children in the first 2016 Egyptian study (Khaled et al.)had multiple dental amalgams which may have contributed to the children's body levels of mercury. The study does not examine the potential link between autism and the vaccine preservative, thimerosal, which is 50 percent ethyl mercury by weight. However, other studies indicate that the ethyl mercury in thimerosal is 50 times as toxic to human tissue as the methylmercury in amalgams and fish (Guzzi et al. 2012, Interdiscipl Toxicol 5:159) and at least twice as persistent in the brain (Burbacher et al. 2005, Environ Health Perspect 113:1015).

The 2016 Metabolic Brain Disease studies are only the latest in a series of important studies by leading Egyptian doctors and scientists linking mercury exposure to autism. A September 2015 paper published in Behavioral Neurology (Mohamed et al. 2015, PMID 26508811) by a group of researchers from the faculty of Cairo's Ain Shams University and the National Institute of Standards studied 100 autistic children and 100 healthy children. The researchers found significantly high levels of mercury, lead and aluminum in the autistic children (probably from maternal fish consumptions, living near gas stations and usage of aluminum paints) and concluded that "environmental exposure to these toxic metals at key times in development may play a causal role in autism."

A November 2014 study published in Environmental Toxicology and Pharmacology (38:1016) by Heba Yassa of the Assuit University Medical School's Department of Forensic Medicine and Clinical Toxicology, looked at 45 children with autism and 45 controls. Using blood and hair samples, Dr. Yassa also found high levels of lead and mercury among the children with autism and not the controls. Using dimercaptosuccinic acid or DMSA as a chelating agent, Dr. Yassa was able to reduce blood mercury and lead levels in the autistic children. His study documents significant declines in autism symptoms with the decrease of metals in the children's blood. The study's concluded: "Lead and mercury are considered as one of the main causes of autism. Environmental exposure as well as genetic inability of certain individuals to excrete metals is responsible for the high levels of heavy metals. Detoxification by chelating agents had a great role in improving those kids."

Dr. Yassa's study duplicated the results of numerous previous peer-reviewed papers and case studies. For example, Blaucok-Busch et al. 2012 Maedica 7:214 and Adams et al. 2009 BMC Clinical Pharmacol 9:17 documents improvements in autism symptoms and even loss of the autism diagnosis following mercury chelation.

Dr. Yassa's 2014 study supported earlier findings by a team of German and Egyptian government and university medical school scientists, which reported in a 2012 study published in Maedica, a Journal of Clinical Medicine (Blaucok-Busch et al. 7:214). The scientists studied the efficacy of DMSA chelation therapy in a sample of Arab children with autism spectrum disorder. That study found that oral DMSA chelation in 44 children with autism ages 3 to 9 reduced body burden of three metals—sodium, mercury and lead—and that detoxification reduced their behavioral effects and neurological symptoms of autism.

These 2014 and 2012 Egyptian studies supported the findings of several other publications and case studies, suggesting that heavy metal chelation has a measurable therapeutic effect on autism. Other studies have reported significant improvement in the symptoms of autistic children following treatment with chelating drugs that remove metals from the body. In a 2002 study, 10 patients with autism were treated with a chelating agent. All but two of the patients showed improvement in their ATEC scores (Lonsdale et al., Neuro Endocrinol Lett 2002, 23:303). A study in 2003 by Jeff Bradstreet compared mercury excretion after three day treatment using the chelating agent, DMSA, and found that children with autism excreted three times the amount of mercury in their urine as the non-autistic control group (Bradstreet, et al., J Am Phys Surg 2003, 8:76).

These are only a sampling of the groundbreaking studies by Egyptian scientists, doctors and researchers on the etiology of autism. Impressive Egyptian studies beg a host of questions for public health officials and American citizens. Most prominently: why can a chaotic society in a war torn and relatively impoverished nation produce high quality science on the etiology and successful treatments of autism while the science on the environmental triggers of autism in the U.S. is stagnant despite the National Institutes of Health spending more than $1 billion on autism research since 2010?

But before all the excitement begins with that, the Georgia and Nashvillebased 16 year old health and wellness authority is looking forward to a wonderful holiday season with family and friends. "Last Christmas," she says, "I made healthier choices, like instead of eating high fat meat, I ate low fat turkey - but I still ate dessert. If I knew I wanted that dessert, during the main meal I would avoid eating mashed potatoes. Even though the temptation is there to gorge yourself because tasty things are hitting your eyes everywhere you look, I think moderation is the key. Still, it's the holidays and if you restrict yourself too much it might be hard on keeping a jolly holiday spirit!"

 

Emily adds that while she doesn't eat an unlimited amount of goodies anymore, she has given herself some restrictions. "We all have to do what works best for us," she says. "I work hard all year long to maintain a certain weight and stay fit, and I'm not going to NOT eat something during the holidays just because it's got low nutritional value. Holiday time with our friends and family is important, and food is part of those gatherings. I would avoid excessive snacking but allow yourself a small portion of dessert. And keep this in mind: even if on a few days you consume extra calories, your body will know what to do with it. If you eat badly for two days, but then on the third day go back to eating your normal amount and consuming your usual amount of calories, your body will drop the few pounds it may gain."

 

Emily is currently in training for a body building competition this coming February, so she's watching her sugar and fat intake this holiday season. But make no mistake, she won't deprive herself of a few decadent treats. She also advises that when you know you're going to eat a huge meal later in the day, like on Thanksgiving, it's a good idea to eat normally during the early part of the day. Starving yourself for hours until mealtime is a guaranteed ticket to overstuffing yourself later, which can make you gain weight and get sick.

 

"When you understand the FoodieFittie lifestyle, you know when to stop indulging and get back to the nutritional program that makes you healthy," she says. "Maybe it would make me happy in the moment to go crazy and eat more than one cupcake or piece of cake after dinner, but afterwards - you guessed it - I would feel bad. But if I allow myself to just have one, I won't feel bad about any of it, physically or psychologically. I always look at the big picture."

 

One of the days in Emily's FoodieFittie program is devoted to depression, and Emily chronicles the painstaking route she took out of some very dark places inside her. Now that she's on the other side of things, and wakes up every day full of joy and determination to live a better, healthier life, she is happy to offer a few bits of advice to make yourself feel better during the holidays (but if you have diagnosed chemical depression, that is something beyond the scope of her expertise).

 

"My message is pretty simple even if getting here isn't easy sometimes: love yourself," she says. "There are so many little things you can do during the holidays to combat whatever blues you are feeling. You can give yourself a facial, read a book you love, go for a walk, go to the gym, do yoga, watch a great movie, listen to music, write things you are grateful for in a journal..Any of those things are good. My story is that I say I ran myself out of depression. I learned that molecular biologists and neurologists have begun to show that exercise may alter brain chemistry in much the same way that antidepressant drugs do -- regulating the key neurotransmitters serotonin and norepinephrine. So even if you live in a cold climate and have to do it inside, get moving and you'll experience some surprising results! The one thing you cannot do when you're depressed is sit around the house thinking of how depressed you are. That will start a downward spiral."

 

Because her oldest brother Ryan has been battling drug addiction for many years, Emily is keenly aware of the toll family tensions can take on the holiday season. Family meals can be uncomfortable for some, but Emily says it's best not to blame yourself for things outside your control and to simply "take relationships with your loved ones one day at a time." She adds: "I might have been sad to see my parents fight or feel like I was losing my brother because of what he was going through, but I got through some hard times simply by doing what I had to do, like going to school, doing chores, working and living life normally in spite of the problems. You have to live your life no matter what troubles are going on."

 

Happily, Emily is looking forward this holiday season to spending time with her family and her grandparents, who will be visiting from Florida along with her visiting brothers Ryan and Max. "It will be nice having everyone together," she says. "Everyone knows I love to cook, and I'll have the opportunity to make cheesecake and chocolate fudge cake, buffalo cheese dip and a bunch of other things - which I will eat in moderation of course! Cooking is another thing I find very therapeutic and when in doubt, that always makes my spirits bright around the holidays."

Having survived the trauma of being bullied, feeling lost and feeling sluggish and fearful of being mocked because of her extra weight, Emily's FoodieFittie program reflects her longtime desire to let her fellow teens (and others) in on many of the insights she's learned and put into practice that completely transformed her life. French Toast On-The-Go

PREP TIME: 10 min.

MAKES: 2

INGREDIENTS:

1 cup (250 mL) ½-inch diced day-old bread cubes

½ (250 mL) pkg Egg Creations Whole Eggs Original

2 tbsp (30 mL) milk

½ tsp (2 mL) cinnamon

1 tbsp (15 mL) brown sugar

Maple syrup, sliced fruit and berries, whipped cream, to serve (optional)

DIRECTIONS:

1. Pack ½ cup (125 mL) bread cubes into two, 2-cup (500 mL) mason jars. In a bowl whisk together Egg Creations Whole Eggs Original, milk, cinnamon and brown sugar. Pour mixture evenly between jars. Let soak for 5 min.

2. Place mason jars in microwave on low heat. Microwave for 1 – 2 min., on 30 sec., increments until French toast is cooked and egg has set. Keep a close eye on jars as they might bubble up.

3. Top with maple syrup, sliced fruit, berries and whipped cream (if using). Close jars with lids for a breakfast on-the-go.

TIPS:

* Try using egg bread for a sweeter version of French toast on-the-go.

* Add different spices like a pinch of nutmeg or pumpkin pie spice.

* Let bread soak in French toast mixture overnight and microwave in the morning for breakfast.
